Foods with a high GI are absorbed quickly into the blood stream and cause a rapid rise in blood glucose levels. While foods with a low GI are broken down more slowly over time and keep blood glucose levels more stable.

And what about the miracle of the loaves and the fishes?

Were those loaves high GI white, moderate GI wholemeal, or low GI rye? I assume the fishes were OK as far as the GI scale goes, unless they were stuffed with mashed potatoes or Coco Pops. Why doesn't the bible tell us this important stuff?

:-D

You have me wondering about the GI of communion wafers as well , now.
If they are transmuted into blood and body, their GI should fall through the floor, but if they are just dry white bread they must have to stay in the evil group.

It's probably called something like the Miracle of the transGIsubstantion or something.

Nice post, Heather, but you left out a VERY important question:
If the Virgin Mary's face appears in your bread, does that raise or lower the GI?
